As we start heading into the chilly weather here in October in the Philadelphia area, I love to start firing up my Crock Pot!  It’s so nice to come home from work, the house already smells AMAZING, and my husband and I can just get comfy and eat dinner with little to no work involved!

Now, to be honest, I’m not that great at making up my own recipes yet.  I rely heavily on the recipes I’ve learned over the years from my mom as well as on recipes from various cookbooks.  However, yesterday morning as I was running out the door for work, I randomly decided I wanted a crock pot meal for dinner.  Unfortunately, I didn’t plan ahead…no planned recipe picked out, the potatoes I had were rotten in the cabinet, I was out of carrots, and if I didn’t leave in the next five minutes I was going to be late for work.  I guess I just ran on instinct, threw things together and the result was pretty good!  Here’s my easy three ingredient crock pot recipe using frozen chicken breasts!

  • 1 teaspoon of salt (I used Jane's Krazy Mixed Up Salt)

And that’s it!  Minimal preparation time and the result was moist, flavorful chicken.  Now since the idea of a Crock Pot meal is “quick and easy” and since I did not have any fresh ingredients to add into the pot earlier in the day I whipped up a few other sides in less than 10 minutes!
Sides I used:
  • Knorr Pasta Sides (Butter Flavor) – 7 minutes cooking time after boiling
  • Frozen Asparagus Spears from Trader Joe’s – 3 minutes microwave time
Enjoy!
